I’m not sure how long Kodiak Cakes has had this Carb Conscious pancake mix, but I only recently discovered it. I like the other selections from Kodiak Cakes fine enough – only as long as they are made with milk and an egg instead of just water. Seeing this mix was carb friendly, I decided to try it out.

Nutritionally, if you are watching your carbohydrate intake, these pancakes deliver on being carb friendly. Looking over the ingredients list, there was nothing listed that raised any red flags to indicate they were, or might be a poor nutritional choice. Fifteen net grams of carbs, six grams fiber, and fourteen grams protein. This pancake should have been a good choice – but I digress…

Dry and Tasteless!

The first batch I had was made with only water, all that I can say is that my kitchen smelled good while they were cooking and they certainly looked good as I poured my sugar free pancake syrup over them. The taste was a huge disappointment to say the least.

The second batch was made with milk and an egg in the hope this would improve the flavor and texture.  They smell good while cooking, and they look just like any other pancake. However, these pancakes were tasteless and dry enough that I was going to have to either add a lot more syrup to make them palatable, or, I was going to need a big glass of water in order to swallow them down as with the first batch.

Third Batch, I figured out how to prepare them!

Go ahead and mix it up in a mixing bowl with water as directed. Next, make sure you have a hot skillet ready to receive the batter. Take a sip or two of your morning coffee, then pour this awful stuff down your garbage disposal, turn off your stove and then find something else better for your breakfast. Me personally, this morning I had some homemade sugar free apple pie filling that I mixed into a steaming hot bowl of oatmeal that I had also mixed with chopped pecans.

All that I can say is this pancake mix is just awful. If you are watching your carbohydrate intake, there are much better choices available in most grocery stores.  You might like what Kodiak Cakes has done with this mix, we don’t all have the same sense of what tastes good to each of us individually. I just cannot bring myself to recommend this mix to anyone, lest I get beat about the head with a mixing spoon.

If you try this mix and enjoy it, let us know what it was that you liked about them besides the nutritional values. It could be that you might make a recommendation in the preparation that would appeal to another reader. As for me, I will stick to eggs and oatmeal for my breakfasts.
